Ingredients
- 400g pearl couscous, cooked to packaging instructions
- Toppings of your choice:
- Shaved carrots
- Ripe avocado halves with a squeeze of lemon
- Shaved raw beetroot
- Shredded kale
- Celery curls
- Crunchy radish slices
- Chopped spring onion
- 1 cup baby spinach
- 30g basil
- 2 Tbsp. toasted pine nuts
- 100ml olive oil
- Salt to taste
- 1/2 cup toasted almonds
- 1/2 cup toasted pistachio
- 1 tsp salt
- 1 tsp black pepper
- 4 tsp toasted sesame seeds
- 1 tsp cumin seeds
- 1 tsp coriander seeds

Method

1Easy Green Pesto Style Dressing

2Blend in a food processor until smooth.

3Fold couscous or grain/pasta of your choice through the pesto until well coated.

4Handmade Dukkah Spice

5Blend to a breadcrumb consistency and keep in an air-tight jaruntil ready for use. It will keep up to a week or so.

6Assemble the couscous with the toppings of your choice.

7Sprinkle with Handmade Dukkah Spice.
