Ingredients
- 60ml pineapple juice from a grilled pineapple, see method
- Oil, for grilling
- 30ml spiced rum
- 30ml coconut cream
- 30ml blue curacao
- Wooden skewers
- Grilled pineapple chunks
- Maraschino cherries or strawberries

Method

1For the pineapple juice, peel the pineapple, cut it into 2cm thick slices and lightly brush with a little oil. Grill the pineapple slices briefly on each side and sprinkle with a little sugar after turning. Place the pineapple slices on a plate. The sugar will release some of the juice from the pineapple to be able to use in the cocktail.

2Mix the pineapple juice with the remaining ingredients and some crushed ice in a shaker.

3Add some fresh ice cubes to a glass and then strain the drink into the glass.

4Put some of the grilled pineapple with the cherries or strawberries onto a skewer and then add as garnish to the glass.
