Ingredients
- 40ml sparkling mineral water or sparkling wine or prosecco
- 20ml Blue Curacao
- 80ml pineapple or orange juice
- 40ml Malibu or coconut rum
- 40ml grenadine
- Crushed ice or ice cubes
- For decoration lemon or orange slice
- Bar spoon

Method

1Add the blue curacao to the sparkling wine or water, stir and then set aside.

2Mix the pineapple or orange juice with the Malibu.

3Fill a large glass with ice cubes and pour in the juice mix.

4Using the back of a spoon, slowly pour the grenadine syrup over the spoon and into the glass. As the syrup is heavier than the juice, it will sink to the bottom.

5Then pour in the blue curacao mixture slowly over the back of the spoon into the glass.

6Garnish with a slice of lemon or an orange twist and serve immediately.
